Last week, we made a dinner that resembled a traditional one – i.e. meat, potatoes, veggie. The meat was a zucchini and rice patty (I will add the recipe as soon as we have it perfected – it just wasn’t quite right this first time around) with mashed potatoes and tomatoes.
But I decided to do something to the mashed potatoes that made them truly stand out. This is such a simple variation. I hope you like it.
- Peel, dice, and cook the potatoes. When cooked, pour out water and mash.
- Add broth (until potatoes are smooth) and keep mashing.
- Add salt, dill and green onion. Mix and serve.
