Herb Mashed Potatoes

Last week, we made a dinner that resembled a traditional one – i.e. meat, potatoes, veggie. The meat was a zucchini and rice patty (I will add the recipe as soon as we have it perfected – it just wasn’t quite right this first time around) with mashed potatoes and tomatoes.

But I decided to do something to the mashed potatoes that made them truly stand out. This is such a simple variation. I hope you like it.

approx. 10 med. potatoes
about ½ cup vegetable broth (we make our own)
salt (to taste)
fresh dill
green onions


  1. Peel, dice, and cook the potatoes. When cooked, pour out water and mash.
  2. Add broth (until potatoes are smooth) and keep mashing.
  3. Add salt, dill and green onion. Mix and serve.
